  • Stability, Formation, and Enhancement of Nutraceuticals during Processing of Selected Grains
    In this research we are investigating effect of processing such as steam cooking, extrusion, and baking  on stability, modification, formation, and enhancement of key nutraceutical compounds in selected grains such as Quinoa, Amaranth, and Buckwheat. This research has been supported by the Center for Advanced Food Technology, Rutgers University.

  • Fortification of Baked Food Products with Omega-3 fatty acids
    In this research, we are working on incorporating DHA and EPA  into baked food products such as cookies and breads.  The objective is find ways of keeping DHA and EPA stable during baking, by optimizing the baking process.

  • Simulation and Optimization of Hyrbid Jet Impingement-Microwave (JIM) Baking
    The objective of this research is to develop a numerical simulation model for hybrid baking and verify the results of the simulation with experiments.

  • Flow Field in a Twin-Screw Extruder
    This research focuses on velocity measurements in the screw channels of a co-rotating, twin-screw extruder. A 2-d laser Doppler anemometer is being used to make the velocity measurements. From the measured velocity distribution, shear rate distribution, particle traces, leakage flows and mixing intensity are calculated. This research has been supported by the USDA and is currently supported by the New Jersey Agricultural Experiment Station.

  • Transport Phenomena in a Jet Impingement Oven
    In this research, we are investigating transport phenomena in a multi-hole jet impingement cooking oven. In particular, we are looking at effects of object geometry on flow field and heat and mass transfer coefficients. This research is currently supported the USDA NRICGP. It was formerly supported by CAFT.

  • Simulation of Fluid Flow and Heat Transfer in an Extruder Die
    In this research we use a finite element method to simulate thermal transport of food materials in a multi-hole die of a food extruder. Conjugate effects which include conduction heat transfer within the die walls and convection to cooling mediums are incorporated in the simulation. Extrusion experiments are being carried out using a multi-hole die to validate the results of the numerical simulation. This research is supported by CAFT.
