Biography

Dr. Montville earned his Ph.D. from the Massachusetts Institute of Technology and his B.S. from Rutgers, the State University of New Jersey. 

A New Jersey native, he has served as Chairman of the Department and Director of the Graduate Program in Food Science and currently holds the academic rank of Professor II (distinguished). He has published more than 100 peer-reviewed papers and 8 books in the areas of food safety microbiology, fermentation biotechnology, mechanistic action of antimicrobial proteins, antimicrobial resistance, and protecting the food supply from bioterrorism.  This research has been supported by more than two million dollars in in grant funding.
