The Indiana Jones of Food Microbiology, Dr. Montville works with ranchers to understand the microbiology of pulque production in Oaxaca, Mexico. He is an International Visiting Professor at the Universidad Technológica de la Mixteca, Huajuapan de León, Oaxaca, Mexico.
